I've Got A New Recipe

This one is so good that we had it last week and my kids asked for it again this weekend...

oh, and it's super easy, too.

Two-Cheese Baked Penne (It was actually three cheese, but due to my lack of goat cheese, I modified the recipe)
2 1/2 cups uncooked penne
12 oz. Pork sausage
1 1/2 tsp. Italian seasoning
1 tsp. crushed red pepper
1/8 tsp. black pepper
10 grape or cherry tomatoes, halved
1 garlic clove, minced
Dash of salt
2 (8-oz.) cans tomato sauce
1 can seasoned, diced tomatoes
3/4 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese

1) Preheat oven to 350 degrees
2) Cook pasta according to package directions, omitting salt and fat. Drain & keep warm.
3) Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Brown sausage, stirring to crumble. Add next six ingredients (through salt) to pan; saute 6 minutes. Stir in tomato sauce and diced tomatoes. Reduce heat and simmer 5 minutes. Add pasta to pan, tossing gently to coat. Spoon pasta mixture into an 8-inch square baking dish coated with cooking spray. Stir in mozzarella cheese and sprinkle with Parmesan. Bake at 350 for 7 minutes or until bubbly and top is browned. Yield: 6 servings

  1. Okay, I've now started adding goat cheese to this recipe, so now it is indeed Three Cheese Penne!
