Tina requested a few recipes from this weeks menu. Today, I'll start with the Feta Chicken (since I can do that one by heart).
Feta Chicken
6 boneless, skinless chicken breasts
1 pkg. of feta cheese, crumbled
lemon juice
salt
pepper
Place chicken in a baking dish. Sprinkle with lemon juice (about 1 Tbs.). Salt & pepper chicken. top chicken breasts with feta crumbles and sprinkle again with lemon juice. Bake at 350 for 45 minutes.
There you have it. It doesn't get much easier than that. I serve it with couscous.

Thanks Barb! This sounds very easy. I LOVE feta cheese! I do not think I ever had couscous. Is it like rice?

ReplyDeleteYes, couscous is kind of like rice - smaller grain though. My kids like it. You can buy it flavored already as well, in the rice section of the grocery store. It cooks like Minute rice. Sometimes we put feta in the couscous as well, right before serving.
