Scottish Ramble
Because "Nothing's Cooler than Kilts in February". I am inviting you all, my blog friends, to come see Evan's first band performance. The Minnesota Police Pipe Band will be performing at the Scottish Ramble at the Landmark Center in St. Paul. They perform at 4:40 on Feb. 14 (what a great way to spend your Valentine's Day) and again at 12:15 on Feb. 15. We'll be there for the Feb. 14 performance. Evan will, obviously, be there for both of them.

ReplyDeleteYour menu for the week looks good. What is cornmeal crusted Tilapia? I have not heard of that but it sounds very good. And what makes the enchiladas swiss?
What a great cook you are!
We are at the end of our groceries so I had to make do. Jeff called this soup The When-Chinese-meets- Mexican-meet-Native American-meets-Italian soup.
Ingredients:
4 cans of various kidney beans
1 can of string beans (by mistake)
1 can of corn
a jar of Chinses ginger/garlic stir fry sauce
a whole onion quartered
Garlic salt,salt and pepper to tast
Enough water to fill the pot to the top about 16/20 cups
Around 3 cups uncooked slow cook type rice
a box of uncooked bow-tie noodles
Boil the first 7 ingredients for a few hours then add the rice and boild until rice is done.Add the noodles about 15 minutes before dinner.Searve with bread and butter.
The trick is to make sure the family is so hungry they will eat just about anything and you will have them begging for more and get rave reviews! Really not one complaint was heard.
I wish we could be there to hear Evan play. However, we will have our own private concert when he brings his bagpipes to Alabama. Mom

The Cornmeal crusted Tilapia is tilapia fish rolled in, you guessed it, cornmeal (and some other seasonings I'm sure). I haven't made it yet, but I'll let you know what I think.
I made the Swiss Enchiladas tonight and I LOVED them (Chris gave them a thumbs down though, so I'm not sure how often we'll be having those. They are Swiss because they have Swiss cheese in them (with chicken, etc.)

ReplyDeleteI would not consider myself a creative cook just a 'I'm desperate to get something on the table' cook.
In all truth, this very soup mixture is repeated many many times throughout the month.Keeps the food budget down.The only difference is a jar of spaghetti sauce or salsa in place of the ginger/garlic stir fry sauce for flavor.Or maybe a can of mixed veggies added.Oh,the adventure...
I also have all those Liberian eaters who use hot sauce by the gallon on most everything ( I am sure it drowns out all other tastes good or bad) and everyone seems to be in a growth spurt and is extra hungry all the time.Even Lily eats the stuff and likes it! No jar or homemade baby food for this girl.She can carry her own among the big kids.
Now you are what I consider a creative cook.I wish I could cook like you do for your family.I have to keep hoping in a different season of life...Chris count yourself lucky!!!
